The Taiping houkui tea belongs to sharp tea. It is a kind of historical famous tea, which was first produced in 1900. The tea was one of the ten famous in an unofficial choice through public appraisal. Taiping houkui green tea is made in the areas such as Xinming, Longmen and Sankou counties at the northern foot of the Huang Mount in Huangshan city, Anhui province. The tea shoots consist two leaves embracing a bud. Tea leaves are flat and straight, naturally open with a little visible fuzz. The tea leaves are verdant and even; leaf veins are green and a little red; The tea smells richly fragrant, and tastes savory and mellow. It has its unique charm: the tea soup is green and clear, tea dregs are even and bright, and the tea shoots are fat, and like flowers.
The quality features of Taiping houkui tea:
The end product of Taiping houkui tea is flat, with the two ends of each shoot a little sharp. The tea shoots are flat, even, and fat and full of fuzz. When being infused, the tea shoots open gradually, and bloom like flowers with two leaves and one bud, either floating or sinking; tea soup is green, with rich fragrance, as rich as that of orchids; the tea tastes mellow and brisk. According to the traditional ways, Taiping houkui tea can be classified into the following grades: Houkui tea is superfine, Kuijian is good, next come to Gongjian tea, Tianjian tea, Dijian tea, Renjian tea, Hejian tea, Yuanjian tea and Wanjian tea, etc.
The color, aroma, taste and shape of Taiping houkui tea have a style of its own, which is characterized by the shapes resembling swords and spears, lively and vigorous. Each tea shoots is with a bud embraced by two leaves that are flat, straight, compressed but not curly, making the tea also known as “two knives and a gun”. The tea leaves are verdant and even; leaf veins are green and a little red, also known as “red silk threads”. The tea leaves are full of fuzz which is not so visible. When being steeped in water, the tea leaves are like flowers, either floating or sinking in the clear and light green tea soup, looking like small monkeys that are giggling and flirting at you. The tea smells richly fragrant, and tastes savory and mellow. Its aftertastes are endless. Drinkers can experience the first infusion’s rich aroma, the second infusion’s dense taste, and the lingering fragrance of the third and fourth infusion and its unique monkey charm.
Taiping houkui tea is picked between the Grain Rain and the Summer Commences, including tea shoots with one bud and three leaves and four leaves. The tea picking period is short, which only lasts 15 to 20 days every year. The tea leaves are collected in batches, and there are “four strict pickings”. The 1st picking is to choose the tea bushes facing to the south and growing on hills surrounding by mists. The 2nd picking is to collect tea shoots from flourishing tea bushes; next comes to the 3rd picking, only the strong and straight tea branches are qualified; the last “picking” is to collect the fat tea shoots full of fuzz.
Tea shoots are cut off from the second leave’s stems. Tea shoots with one bud and two leaves are called “Jiantou” (sharp tips), which are top grade raw materials for making Houkui tea. All the tea leaves are generally picked in sunny days or in the forenoons in cloudy days, and in the afternoons, the tea shoots are divided. Then, the tea shoots will be de-enzymed, rubbed, and baked, with all the procedures finished in the same day.
The excellent features of Taiping houkui tea:

Now the tea is classified into three grades, that is, superfine Houkui tea, fine Kuijian tea and common Sharp tea.
