The tea picking period is short, which only lasts 15 to 20 days every year. The tea leaves are collected in batches, and there are “four strict pickings”. The 1st picking is to choose the tea bushes facing to the south and growing on hills surrounding by mists. The 2nd picking is to collect tea shoots from flourishing tea bushes; next comes to the 3rd picking, only the strong and straight tea branches are qualified; the last “picking” is to collect the fat tea shoots full of fuzz.
Tea shoots are cut off from the second leave’s stems. Tea shoots with one bud and two leaves are called “Jiantou” (sharp tips), which are top grade raw materials for making Houkui tea. All the tea leaves are generally picked in sunny days or in the forenoons in cloudy days, and in the afternoons, the tea shoots are divided. Then, the tea shoots will be de-enzymed, rubbed, and baked, with all the procedures finished in the same day.
